Shaksuka
Shakshuka is a Middle Eastern dish that can be eaten for any meal in the day. This meal is rich in vitamin A, vitamin C, vitamin K, folate and potassium. The eggs add a lot of protein and the feta has plenty of calcium. This will be our first flash sale recipe so be sure to check the link out at the end of the recipe!
Makes 4 servings
Ingredients:
1 quart - peeled and seeded fresh tomatoes
1 pound - Stout Creek Farm ground beef
2 tbsp - avocado oil
2 cups - thin sliced sweet yellow onion
1 1/2 tbsp - minced garlic
1 cup - medium sliced zucchini
1 cup - medium sliced yellow squash
1 cup - roasted eggplant
1 tsp - toasted and ground coriander seed
1 tsp - ground cumin
1 tsp - smoked paprika
8 eggs
Directions:
Brown the ground beef, drain the liquid and set aside.
Add the avocado oil to the hot pan, and add the sliced onions. Cook for 2 minutes over medium heat.
Add the vegetables and seasonings. Cook for 3-4 minutes then add the minced garlic.
Add the tomatoes and ground beef, reduce heat to a low simmer and cook for 45-60 minutes.
Add salt and pepper to taste.
Crack the eggs over the hot Shakshuka and place into the broiler for 3-5 minutes.
Drizzle the dish with minced fresh herbs and extra virgin olive oil.
Remove the pan from the oven and serve with grilled sourdough, pita, flatbread, gluten free bread. or medium sliced vegtables of your choice.
